No, the software is not updated to work with Windows 8.1 64bit. I have checked the official website and these are the supported operating systems for version 2.0:
Windows® XP Home (SP 3+), Professional (SP 3+), & Professional x64 (SP 2+). Windows Server® 2003 R2, Standard (SP 2+) & 2003 R2, Standard x64 Edition (SP 2+). Windows Vista® Home Basic, Home Premium, Business, Enterprise, & Ultimate (32/64-bit) (SP 1+). Windows Server® 2008 Standard (32/64-bit) & 2008 R2 Standard (64-bit). Windows® 7 Home Premium, Professional, Enterprise, & Ultimate (32/64-bit). *ScandAll PRO runs as a 32 bit application and requires Microsoft.NET Framework 2.0 SP2 or later.
As you can see, there is no Windows 8.1 compatibility present or mentioned in this list.
Will Fujitsu ScandAll PRO software allow me to scan to email whilst converting to PDF in the process?

Yes, you can use this application to scan directly to Email or to PDF. To achieve this, use the official How to use ScandAll Pro user guide. You can download this guide from the Fujitsu website. A compatible PDF reader needs to be installed on your computer before you can open the file. For this purpose, I recommend using the database of Software Informer to look for an application.
You will have to use the guide available for the ScandAll Pro application to learn how to scan a multi-page document to PDF or TIFF file format. To download the user guide, I recommend checking the websites listed through Google Search. Once you are on Google, you should also check video guides available on YouTube. The software by default supports the multi-page feature, but it needs to be configured. Choose the output file as PDF then access the configuration options and tick the option related to the multi-page format, and then you can start the operation. Once the option is checked and the scanning is started, the software will ask you if you want to input another document or finish the operation.
When I scan a document, I don't want to save it right away. How can I set my scanner so it will "collect" the scanned documents and will save them at a later time?

Unfortunately, this isn't possible. Once you scanned a document, you either save it or lose it. There is no way to "store" more that one document in the scanner's memory in order to use it later. You can set your scanner to save all the documents in a temporary location, and later you can go through them and move them as you like.
Now ScandAll Pro v 1.8 works with Windows 10 on Fujitsu fi-6130 but I need to replace the scanner
Yes, ScandAll Pro v 1.8 should work with Windows 10 on Fujitsu fi-8150.
Yes, ScandAll Pro v 2.0 should work with Windows 10 on the Fujitsu fi-6140 scanner.
